It's easy to fly from the U.S. to New Delhi or Bombay. You can fly direct or connect through Europe or the Middle East.
We've flown, and had good experiences, on United, Delta, British Airways, Virgin Atlantic, Lufthansa, Swiss Air, Air France, Turkish Air, Emirates, Etihad and Qatar.
Avoid Air India and Saudia, if you can.
It's easiest to fly through New Delhi. Once you land, plan for at least 90 minutes to deplane, collect your luggage and clear customs.
We usually spend the night at a hotel in Delhi before continuing to Udaipur. It gives us a chance to shower and rest after a long day of travel. About 5 minutes from the airport, a business district called "Aerocity" has tons of comfortable hotels where you can stay without having to travel into the city.
If you're planning to continue to Udaipur without spending the night, note the international airport and the domestic airport are in different buildings. You'll have to check in and go through security again.

April 11 5:11 p.m. -- Depart Washington Dulles (IAD) for Newark Liberty
7:11 p.m. -- land in Newark
8:55 p.m. -- depart Newark for New Delhi
April 12 9:30 p.m. -- land in New Delhi
11:15 p.m. -- clear customs
11:40 p.m. -- arrive at J.W. Marriott Aerocity Hotel
April 13 9:00 a.m. -- leave J.W. Marriott for the domestic airport
11:10 a.m. -- leave Delhi for Udaipur on Air India Flight 857
12:25 p.m. -- arrive in Udaipur
